1. Add all the ingredients -- the celery, cilantro stems, garlic, black pepper, turmeric, soy sauce, and fish sauce -- into the food processor and pulse for about 30 seconds. 00:09

2. Turn the processor off and, with a rubber spatula, scrape down the sides of the bowl. Put the lid back on and process until the mixture turns into a coarse, fibrous, uniform purée. Pour the marinade into a bowl and use as needed. 01:00

Chef Notes
A Robot Coupe is a commercial food processor used commonly in restaurant kitchens. Home food processors would also work well.
Use the marinade with chicken, fish, pork, lamb, or any other meats. Marinate overnight and cook as desired.
