1. Add the fat to the pan. Using your hands, spread the fat lightly and evenly across the exposed cooking surfaces of the pan. 00:27

2. Add the flour to the bottom of the pan. Pick up the pan and move the flour around until all of the exposed cooking surfaces are dusted. Knock the excess flour out of the pan and proceed with the recipe. 01:12

Chef Notes
Chef Rose’s pan preparation technique can be used for cake pans, muffin pans, and springform pans. This preparation technique is not needed when making pies, cookies, or any type of dessert that uses a lean dough.
Fats used for greasing the pan can be varied. In this tutorial Chef Rose uses butter, but shortening, olive and vegetable oils can be used as well. To avoid altering the flavor profile of your baked good, use the same fat for greasing as is used in your recipe.
As Chef Rose mentions in this tutorial, If making a chocolate cake or a sweet, dark dessert, use cocoa powder for dusting instead of all-purpose.
