Bruce Kalman has perfected a marriage between Northern Italian and Californian cuisine that he showcases at his recent and highly celebrated restaurant, Union, in Old Town Pasadena. At Union, everything is locally sourced and craft made. Chef Bruce takes pride in butchering his own meat, hand-rolling his pastas, aging cuts for his charcuterie plates, and making his cheese in-house. Chef Bruce even has his own line of ‘vine to jar’ hand picked and packed pickles, called Bruce’s Prime Pickly Co, that he distributes to specialty markets and restaurants across the nation.
Chef Bruce’s previous Executive Chef stints include ‘The Churchill’ in West Hollywood, and ‘The Misfit’ in Santa Monica. Chef bruce received a James Beard nomination for ‘Rising Star Chef’ and was the season 15 winner of Food Network’s hit cooking show, “Chopped!”
