About Charles Olalia

Chef Charles Olalia currently serves as the Chef de Cuisine at the renowned Patina Restaurant in downtown Los Angeles. There, he carries on the fine-dining ideals of Patina's founder, Chef Joachim Splichal. 

Born in the Philippines, Olalia became interested in food at an early age and eventually went on to graduate from culinary school in Manila. He has worked in kitchens all over the country, including at Thomas Keller's famous outpost The French Laundry. Prior to joining Patina in 2010, Charles served as the private chef to Oracle founder and CEO Larry Ellison.
