About Ryan Shields

Ryan Shields is the executive chef at Bullfight - a modernist Spanish restaurant in Austin, Texas. His dishes include a diverse variety of meats and charcuterie, beans, almonds and walnuts with fresh bright greens and vegetables. He’s keen on preparations of hot and dried peppers, Spanish cheeses, pickled fare, and fresh seafood, masterfully combined to create small tapas-style dishes. 

Chef Ryan graduated from The Culinary Institute of America in Upstate New York, with a bachelor’s in hospitality administration and management. Since then, Chef Ryan has filled positions in kitchens across the country, from line cook to sous chef and now executive chef at Bullfight. His experience and focus on this type of cooking throughout his culinary career make him an excellent authority on these techniques in Spanish and French cooking preparations.
