About Tim Ma

Tim Ma is the owner and chef at several Washington D.C.-area eateries: Arlington, VA restaurant Water & Wall; and more recent ventures Kyirisan and Chase the Submarine (both names are derived from those of his three children). Tim uses locally sourced ingredients whenever possible, creating modern American, globally influenced dishes that are at once familiar and novel in flavor and presentation. 

Tim started out as an engineer, but a passion for cooking sent him to New York City to study at the French Culinary Institute. Tim runs his “empire” with his wife Joey Hernandez, who also left the non-culinary world to take a chance on restaurant ownership. They opened the first restaurant by expensing everything on their personal credit cards, and last year they funded a supper club/catering venture using Kickstarter.  Tim’s food reflects this innovative, leap-of-faith attitude: by mixing French, Asian, and American cuisines, he plates bold dishes that challenge the diner to reach outside her comfort zone and explore novel flavor combinations.
