Native to Central America, the avocado is available all year round and generally comes in four main varieties: Hass, Ettinger, Fuerte, and Nabal. Containing high nutritional value, such as fiber and vitamin C, the avocado is not only healthy for you, but unbelievably good for your soul. It's also a vegetable, and not a fruit!

With its nutty taste and buttery texture, the avocado can be easily incorporated into a variety of dishes. Once you understand how to properly work with an avocado, you can unlock thousands upon thousands of avocado recipes, a few of which are features in this course.

Chef Patricio Sandoval is the executive chef and co-owner of the Mercadito restaurants in Chicago. Chef Patricio channels his childhood memories of growing up in Acapulco with a restaurant family into refined Mexican street food that has won the hearts of Chicagoans.

Chef Bryon Freeze

Chef Bryon Freeze is the executive chef at Tar and Roses in Los Angeles. Chef Bryon burst into the culinary spotlight when he won "Chef Wanted," a chef competition show on the Food Network.

Chef John Sedlar

Chef John Sedlar is the executive chef and co-owner of Rivera in downtown Los Angeles. Globally renowned for his Latin and creative Southwestern cuisine, Chef John is the youngest chef ever to receive the Silver Spoon Award from Food Arts magazine in 199. He was also named “Chef of the Year” by Esquire in 2011.

Chef Giuseppe Tentori

Chef Giuseppe Tentori is the executive chef and partner at GT Fish & Oyster in Chicago. A native of Italy, Chef Giuseppe has worked at some of Chicago's finest restaurants, establishing himself as one of the city's most well-respected chefs.

Chef Neal Fraser

Neal Fraser is currently the executive chef and Co-Owner of Los Angeles power spot BLD, which LA Weekly called “the most useful restaurant of our time.” He is also the executive chef and partner of the purist gourmet venture Fritzi Dog.
