Prep Time Cook Time Total Time Serving Size

The Steps

  1. 1. Marinate the chopped shrimp in 1/2 cup of chipotle purée and 1 teaspoon of minced garlic. Set aside. 00:34

  2. 2. Heat a sauté pan on medium heat. Add oil, swirling to coat the entire bottom surface. Turn the heat up to high. 01:22

  3. 3. Add 1 tablespoon of minced garlic to the hot pan. Stir to keep the garlic from clumping and burning. Add more oil as needed. 01:41

  4. 4. Stir in the chopped red onion and allow to cook for about 30 seconds. Season with salt. 02:35

  5. 5. Add in the marinated shrimp and any residual marinade. Stir and season with salt. Cook the shrimp for 3-4 minutes. Do not overcook. 03:18

  6. 6. Turn off the heat. The shrimp will continue to cook in the pan. Add lemon juice and 2 more tablespoons of chipotle purée. Stir. 04:20

  7. 7. Add the cubes of cold butter and stir into the sauce. Taste for seasoning and add salt as needed. 04:58

  8. 8. To prepare the tacos: Place four tortillas on a plate. Spoon a small amount of shrimp and sauce onto each tortilla. Top with a slice of avocado. 06:08

Chef Notes

For chipotle purée: Either purchase a pre-prepared canned version or blend the contents of a can of chipotle peppers in adobo sauce into a purée.*

Adding cold, cubed butter to finish a sauce is a French culinary technique called "mounting." The butter will melt from the residual heat and emulsify with the other ingredients, creating a rich, thick sauce.
