The Steps

1. Place the marshmallows in a single layer onto a heat-proof surface such as a sheet pan. Toast them with a torch until brown but not burned. Set them aside in the refrigerator. 00:26

2. Spread Nutella evenly on both slices of bread. Break the graham crackers into 8 pieces and place them on top of one chocolate-covered bread slice. 01:47

3. Take the marshmallows out of the refrigerator and place them on top of the other chocolate-covered bread slice. Lightly press the sandwich halves together. 03:01

4. Place the sandwich on a griddle heated to 300-350 degrees or on a pan heated on medium-high. Compress the sandwich with a bacon press or heavy sauté pan. Toast for about 1 minute on each side or until the bread is golden brown. 03:20

5. Allow the sandwich to cool for a couple minutes and then, with a sharp knife, cut it diagonally into two even triangles. Serve with ice cream, if desired. 04:56

Chef Notes
Briefly freeze the marshmallows beforehand to slow the rate of melting when toasting. You want
to maintain most of the texture, not end up with marshmallow
goo.
Brioche is a rich bread with a high butter and egg
content, giving it its golden yellow color. Brioche is most commonly served in desserts or for breakfast.
