Gluten is a protein present in wheat flour, as well as in flour made from barley, rye, and spelt. Gluten creates structure in dough, helping it to rise and develop a light and chewy texture.

Gluten free flour is a term that is applied to flours that are made of non-gluten containing products. 

When converting a traditional recipe to gluten free one, the flour should be substituted based on weight (grams) rather than volume (cups). Unless you’re using a true cup-for-cup gluten free flour blend, use a digital kitchen scale to adjust the amount of flour used.
