  1. 1. Slightly melt the swiss cheese onto a mound of sauerkraut. 01:52

  2. 2. Layer the corned beef onto one slice of rye bread. Spread the Russian or thousand island dressing onto the other slice. Flip the sauerkraut and swiss onto the dressed slice of rye, so that the swiss rests against the bread. Place the sauerkraut and swiss side down on top of the corned beef half. Serve with a pickle or a side of sauerkraut. 02:04

Chef Notes

The main trick to a great reuben sandwich is the cut of the corned beef. Be sure to buy a well-cured corned beef, then cut very long, thin strips; about 1/4 inch thick. Every 4 slices is about 4 ounces, which is a good amount for one sandwich.
