1. Turn on a kitchen scale. Place an empty container on top of the scale. Press the zero or tare button with the container still on the scale to return the scale to zero. Pour sugar into the container to reach 100 grams. 01:08

2. Remove the container from the scale. Place a separate empty container on the scale and press the zero or tare button. Pour 100 grams of water into the container. Combine the water and sugar in one of the containers. 01:37

Using a scale to make simple syrup ensures consistency, allowing for a perfect batch every time.
Simple syrup is made using a 1:1 ratio of sugar to water. Some cocktail recipes call for a 'rich' simple syrup, which is made using a 2:1 ratio of sugar to water.
Use the best quality of water available to achieve the best tasting simple syrup.
Julian uses refined white sugar to make his simple syrup, but evaporated cane and turbinado varieties can be used as well. Turbinado sugar will provide a more molasses-like flavor than other sugars.
If an immersion blender is unavailable to you, use a standing blender.
There are two ways to make simple syrup. One method uses heat to meld the sugar and water together. The other is demonstrated in this tutorial and is referred to as the cold method. Julian prefers using the cold method, as heating the components can often lead to structural changes that alter the flavor of the syrup.
